Brothology is the newest venture for chef Tory Peters who also operates home delivery meal service Ready Spaghetti out of the kitchen at long-running organic store, Hunter Organic Food, at The Junction.
"I have been cooking in here for Ready Spaghetti and having all of these beautiful aromas going through the shop and I've had many people ask if the cafe was open and I kept saying no," Peters said.
"I was trying to figure out what the right idea was for the cafe side of things and then we came up with the idea for Brothology.
"I love broth and I make beef and chicken stock from scratch every week for Ready Spaghetti, so I have intensified that into the actual bone broth for all those added health benefits."
There are three nourishing broth options on the menu: organic vegan shiitake dashi, biodynamic beef bone marrow and organic turkey, and organic chicken (all $7) which can be enjoyed as a simple broth or made into a more substantial "broth bowl" with a choice of add-ins (fresh herbs, ginger and garlic, tamari, fried chilli oil, miso and lime juice, as well as shredded kale, roasted pumpkin, pickled beetroot, charred corn, vermicelli noodles, soft boiled egg, tofu, brown turmeric rice, medicinal mushrooms, poached chicken or slow-cooked pulled beef).
Alternatively, choose from one of the four hot broth bowls designed by Peters: The Spicy One, The Fun Guy, The Miso Noodle or The Heart Guy which range from $16 to $20.
The nutrient-dense, organic broths are not only ideal as a warming meal during the cooler months, but also offer a number of health benefits.
"The beef marrow bone broth with turkey is anti-inflammatory and helps with joint and brain health, and the chicken is an immune-boosting broth," Peters explained.
"They are both delicious, but the chicken is a bit lighter in flavour, and the vegan dashi and shiitake mushroom broth is all about getting the best of those amino acids and nutrients into your body."
In addition to the broth, Brothology also has a specialty tea menu plus a flavour-packed banana smoothie which can be boosted with the addition of cocoa, spinach or one of Peters' home-made gelatine bone broth cubes.
Orders can be placed inside the cafe or from the side window for a quick grab-and-go meal.
"Coming into winter, broth is such a nice, wholesome and warming thing to enjoy," Peters said.
"It has all of the health benefits but it makes you feel good, too."
